Quick Cinnamon Buns with Buttermilk Icing
Usually, I visit the King Arthur Flour store and buy a box of cinnamon bun mix and that is how my husband gets his treat! To be honest, he will actually eat the Pillsbury in the can type. I love the smell of cinnamon buns and will eat maybe a half or a bite, but not a big fan of dough type treats. These are quite good however.
You will need 1 tablespoon of butter melted in pan start.
Cinnamon-sugar filling
3/4 C packed dark brown sugar
1/4 C sugar
2 tsp cinnamon
1/8 tsp cloves
1/8 tsp salt
1 tbls unsalted butter melted
Dough
2 1/2 C Flour (plus extra for suface rolling)
2 T sugar
1 1/4 tsp baking powder
1/2 tsp soda
1/2 tsp salt
1 1/4 C buttermilk (or sour your milk)
6 Tbls unsalted butter (melted)
Icing
2 Tbls cream cheese softened
2 Tbls spoons buttermilk
1 C confectioners sugar
Adjust oven rack to upper-middle position and preheat to 425 degrees. Melt your tablespoon of butter in 9 inch nonstick pan and coat entire pan. Make filling buy combining dry ingredients, and then adding melted butter and stirring with fork until it resembles we sand. Set aside
For dough, Whish flour, sugar, baking powder, soda and salt in large bowl. Whisk buttermilk and melted butter in bowl, and add to dry ingredients with wooden spoon until liquid is absorbed about 30 seconds. Transfer to your floured surface and need until smooth.
Pat dough with hands unto 12×9 rectangle. Fill, roll, cut into 8 buns. Place into pan. Brush with any remaining melted butter. Bake until edges are golden brown around 23-25 min. Lift off with metal spatula trying not to separate buns. Put on greased cooling rack. Cool five min before icing.
Icing - For easy clean up - line rimmed baking sheet with parchment paper, set rack over pan. Whisk cream cheese and buttermilk until smooth, it may look like cottage cheese at first. Stir in confectioners sugar, whisk until smooth glaze forms, about 30 seconds. Spoon glaze over buns. Best if served immediately.
