Creamy Lemon Squares

I came across this in a magazine one day. If you like lemons you will love it. You can use the reduce fat cream cheese and Nilla Wafers if you want to cut down your fat.  Laughing I always use whatever I have on hand, but if course the full fat version tastes better.

Creamy Lemon Squares

2o Nilla Wafers finely crushed

1/2 C flour

1/4 C firmly packed brown sugar

1/2 stick cold butter

1 8 oz package of cream cheese

1 C sugar

2 eggs

2 tbls flour

3 tbls grated lemon peel

1/4 C fresh lemon juice

1/4 tsp baking powder

2 tsp powdered sugar

Preheat oven to 350 degrees. Line 8-inch baking pan with foil, extending foil over edge of pan. Combine wafer crumbs, 1/2 C flour and brown sugar. Cut in butter with pastry blender or two knives until mixture resembles course crumbs; firmly press into bottom of prepared pan and bake 15 min.

Meanwhile, beat cream cheese and granulated sugar with mixer on medium speed until blended. Add eggs and 2 tbls flour; mix well. Blend in 1 tbls of lemon peel, lemon juice and baking powder, pour over crust. Bake for 25-28 min or until center is set. Cover and refrigerate at least two hours or overnight. Sprinkle with powder sugar and garnish with rest of lemon peel just before serving.
