Cadbury Creme Egg Muffins

Looking for something for Easter Morning to shock the kids? Or how about just a fun treat? I ran across this today and I think I would be too scared to eat it! It is an “egg muffin” mad with Cadbury Creme Eggs. I was tempted to try these out, but I think my husband would have fainted if I ruined his precious Cadbury Creme Eggs.

Cadbury Creme Egg Muffins
2 cups all purpose flour
2 tsp baking powder
1/2 tsp salt
3/4 cup sugar
2 large eggs
1/3 cup butter, melted and cooled
1 tsp vanilla extract
1/2 cup milk
12 mini Cadbury creme eggs (not full size)

Preheat oven to 350F. Line a 12-cup muffin tin with paper liners.
In a large mixing bowl, whisk together flour, baking powder and salt.
In a small mixing bowl, whisk together sugar, eggs, melted butter and vanilla until smooth. Whisk in milk.
Pour wet ingredients into dry ingredients and stir until just combined and no streaks of flour remain. Evenly distribute muffin batter into prepared pan. Place 1 mini Cadbury creme egg in the center of each muffin. You can use a small knife to pull a bit of batter over the top of the mufin, if you like.
Bake for 14-16 minutes, until the top of the muffin springs back when lightly pressed and the edges are a light gold.
Cool on a wire rack before slicing.

Makes 12.

Chocolatey NestEgg Shortbread Cookies

Here is a cute recipe for Easter. I found this on the Nestle website. They look really easy to make also. Since it is from the Nestle website they want you their product, but I am guessing you could change the recipe up some and use any kind of holiday egg out there! It would be fun to experiment with different flavors and have fun with it. Coloring the glaze would like nice too!

  • COOKIES
  • 1 package (13 ounces) NESTLÉ CRUNCH or Milk Chocolate NestEggs, unwrapped
  • 1 cup (2 sticks) butter, softened
  • 2/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1/2 cup raspberry jam
  • GLAZE
  • 1 cup powdered sugar
  • 1 tablespoon butter, softened
  • 1 tablespoon milk or water
  • Directions:
    FOR COOKIES:
BEAT butter, granulated sugar and vanilla extract in large mixer bowl until creamy. Gradually beat in flour. Cover; refrigerate for 1 hour.

    PREHEAT oven to 350° F.

SHAPE dough into 1-inch balls; place 2 inches apart on ungreased baking sheets. Press thumb into tops to make 1/2-inch-deep depressions (dough will crack around edges). Fill each depression with about 1/4 teaspoon jam.

BAKE for 14 to 16 minutes or until edges are lightly browned. Immediately press 1 Nestlé NestEgg into center of each cookie. Cool cookies on baking sheets for 2 minutes; remove to wire racks to cool completely.

    FOR GLAZE:
COMBINE powdered sugar, 1 tablespoon butter and milk in small mixer bowl; whisk until smooth. Add more milk if needed. Drizzle over tops of cookies.
