Crustless Mini Quiche

I like these as a quick breakfast, snack or for a party! I am not a big fan of crusts so I make my mini quiche this way. You can use any combo of veggies and meat you like!

Ingredients:
1 tbs butter

1/2 C chopped spinach drained well (or brocolli

1/2 Cup of meat pepperoni, salami, (if you want not needed)

6 large eggs

4 tbs of milk

4 oz chedder cheese coarsely grated

1/4 tsp. salt

1/8 tsp ground black pepper

Preheat oven to 425. Grease two 24 mini-muffin pan cups. In a small saucepan melt butter over moderate heat. Add veggies and meat; saute’ until soft, about five minutes. Remove the pan from the heat and let the mixture cool slightly. In medium size bowl, combine eggs, cheese, salt and pepper. Stir in veggies and meat. Spoon about a tablespoon of the mixture into each muffin cup. Bake until centers are set, 8-10 minutes. Let the quiche cool for 1 minute. using a knife, loosen the quiches around the edges and remove from the cups. Arrange them on platter and serve.

Homemade Cocktail Sauce

I was going to a party with some shrimp this past weekend and realized I did not have any cocktail sauce. I made my own, and now I will never buy it from the store again! It was good.

Cocktail Sauce

6 Tablespoons of Ketchup

Tablespoons of Horseradish (you can adjust to this to your liking)

2 Tablespoons of Lemon Juice (need to adjust this too)

A dash of hot sauce

A sprinkle of celery salt

Sweet and Hot Salsa

Add something sweet and healthy to your salsa by adding fruit. It adds a little more texture, and some great flavor. You can control how hot this will be by the seeds in the jalapenos.

Sweet and Hot Salsa
1/2 C red pepper, diced

1/2 C yellow pepper, diced

1/2 C green pepper, diced

1 C dried raisins, apricots or peaches

1 C fresh pineapple diced

1/2 C red onion diced

1/4 C fresh cilantro finely chopped

1/2 C jalapeno pepper, seeded and minced

3 Tbls Lime Juice

1 Clove garlic, minced

1/2 tsp chili powder

1/4 tsp cumin

1/4 tsp salt

Tortilla Chips

Combine ingredients in a bowl. Cover and refrigerate at least an hour for flavors to blend together. Serve with your favorite tortilla chips. Makes three cups. The longer you let it sit the better it will taste!

Jalapenos Stuffed with Cream Cheesed wrapped in Bacon

I really love these as side dish to burgers or steaks, or too bring to parties. The last time I made them, the peppers were really hot though. Everyone ate them, but they were drinking several beverages! You can grill them or bake/broil them. They are really easy to make.

10 Jalapenos cut in half and cleaned out good

4 0z of cream cheese (softened)

1/2 C shredded Cheese (I have used Monterey Jack, Cheddar, Colby, Whatever I have)

5 slices of bacon cut in half

Mix the cream cheese and cheese together and stuff into your jalapenos. Wrap bacon slices around stuffed jalapenos. Bake at 375 for 10 minutes until just about brown, then broil for another three minutes. If you are going to use the grill, keep an eye on them the entire time.

You can make as many as need for a group just adjust the amount of cream cheese and cheese!

Serve hot!

Creamy Shrimp Cocktail Dip

I received this recipe from Philadelphia Cream Cheese. I won a bunch of recipes from them in a nice recipe box, and several coupons for free cream cheese. I love cream cheese and I love seafood so this is a nice combination. You need a nice heavy cracker to spread this thick dip on. I use Wheat Thins or Triscuits.

1 8 oz package of cream cheese

3/4 pound cooked shrimp, chopped (about two cups)

3/4 c cocktail sauce

1/4 c shredded parmesan cheese (I think any cheese would work)

1/4 c sliced green onions (I used red peppers - raw onions give me a headache)

Spread cream cheese onto bottom of 9 inch pie plate. Toss shrimp with cocktail sauce; spoon over cream cheese. Sprinkle cheese and onions over shrimp mixture. Serve with crackers of your choice. I suppose I could have put the onions on top and dug around them!

Bourbon Hot Dogs - Great for Parties!

I have had this recipe for years. It was given to me when I worked for a newspaper over fifteen years ago. This is a big hit at potlucks, or any party. You can make it in a crockpot, which I do, or simmer on the stove. The original recipe that I am posting only calls for two pounds of hot dogs, but I have used up to five pounds for larger parties. It makes quite a bit of sauce, and two pounds is not enough in my opinion. I have also used kielbasa. The longer you let it simmer the better it tastes!

Bourbon Hot Dogs

2 lbs (or more) hot dogs cut up into small bite size pieces

1 1/2 cups of ketchup

1 1/2 cups of brown sugar

3/4 c bourbon

1/4 tsp dry mustard

dash of hot sauce (or as much as you like)

Combine ingredients in crockpot and cook on low for at least three hours. If you are cooking on stove top cook at least one hour. The longer you keep these simmering the better they are.

Texas Chili Dip

My cousin sent this recipe and she varies it every time she makes it by using whatever canned beans she has on hand. She serves this dip with with nacho chips and some Margaritas! I have not made it yet, but I trust her opinion because she is older than me. Smile I do have a gang coming over this weekend, who love to snack, and a couple of the ladies do enjoy Margaritas! We may just have to try this!

Texas Chili Dip

2 (16 oz.) cans black beans
1 (16 oz.) can corn
1 (16 oz.) can garbanzo beans
8 medium tomatoes, diced into small pieces
1 medium red and/or green pepper diced
1 red or white onion, diced
2 (4oz.) cans diced green chilies
3 diced avocados
Juice of 4 to 5 fresh limes (I also add some of the lime pulp)
2 to 3 cloves pressed garlic
Cilantro, finely chopped, to taste

Combine all ingredients and refrigerate several hours, serve with nacho chips at room temperature.

My husbands Valentine Gift - Kim and Scotts Pretzels!

I do quite a bit shopping from QVC and most of the time it is food related. I have bought Mrs. Prindables Apples (more than once), crab cakes, and cheesecakes. I love their food choices, and they deliver fast. I love that you can watch the episodes live on your computer, how convenient when you are travelling. Laughing Almost every holiday throughout the year, I buy my husband some food item from QVC and he has not been disappointed. For about six months now I have been reading the reviews on Kim and Scott’s filled pretzels, and they have been about fifty fifty. Some say they are great, others say there is not enough filling and not worth the money. Well I bit the bullet and ordered the fourty-eight piece pizza sampler for him for this Valentine’ s Day. It was hard to hide the rather large box that came so he opened it early. Last night he popped a few in the oven and to my dismay it was not the sampler, which was to consist of pepperoni, sausage and the works. They were all CHEESE! How do I know for sure, my husband kept heating up one after another to be sure. Ok, he actually loved them!

I called the QVC customer service department to verify I had ordered the sampler, and the nicest woman told me I did and it must have been a packing error. My husband was in the background saying the cheese was wonderful. She was laughing and said to tell him he could finish those up and his sampler would be on the way followed by his free Nutri-System kit. What a perfect line! She said to enjoy them all!

He better pace himself! The pretzels are a geat snack, appetizer, or a side to a soup or salad for a light meal.
