I really love white chocolate, so when I have some of those left over white chocolate bunnies I love to chop them up and make some goodies out of them.
White Chocolate Brownies
6 oz White Chocolate, cut up
1 stick butter
1 1/2 tsp vanilla
1/2 tsp baking powder
6 oz chocolate chips
3/4 C sugar
2 eggs
1 1/2 C flour
dash of salt
In glass bowl, combine white chocolate, sugar, and butter. Microwave on high for two minute or until ingredients are melted and smooth when stirred. With a whire whisk, beat in eggs and vanilla until well blended. Add flour, baking powder an salt, until well mixed. Stir in chocolate chips. Spread evenly in buttered, foiled pan. 9×9. Bake 20 to 25 minutes or until golden brown. Do not overbake. Cool before cutting.

These Brownies are a little bit healthier than your typical brownie, and they are quick and easy to make. They taste much better than the ones you buy in the box also. Use any combination of dried fruit you like!
Easy Fruit Brownies
1/2 C flour (use whole wheat if you like)
1 C Sugar
6 T baking cocoa
1/2 c butter, melted and cooled
2 eggs, beaten
1/2 c dried cranberries, raisines or cherries (or any combination of dried fruit)
Place flour, sugar and cocoa in an ungreased 8×8 baking pan. Stir with fork until combines; set aside. In a small bowl, blend butter and eggs well. Pour butter mixture into flour mixture. Stir with fork, scraping corners and sides until wet and dry ingredients are completely combined. Stir in dried fruit. Bake at 350 degrees for 25 minutes, or until center feels set when lightly touched. Cool and cut into squares. Makes 16.

I am not a big fan of making brownies that come in the box. I can taste the oil even after that they are made. This is one of two recipes I use that is just as quick as using the store bought brownies, and it tastes much better. Everything in this recipe, I always have on hand.

Chocolate Chip Brownies
2 sticks of butter (melted in large bowl in microwave)
2 2/3 C light brown sugar
3 tbls hot water
3 Eggs
3 C flour
3 tsp vanilla
1 tsp baking soda
1 tsp salt
1 12oz bag of chocolate chips
Add the brown sugar to melted butter and mix well. Add hot water, and eggs one at a time, followed by the vanilla. Sift together the flour, baking soda and salt. Add dry mixture to the wet mixture and mix until well incorporated. Stir in chocolate chips. Put ingredients in a greased jelly roll pan. 13×9 or 9×9 if you like them thicker. Bake at 350 degrees for 25 minutes. If you put them in a smaller pan they will need to cook longer. Use toothpick to check. They are done when no longer wet in middle.
