Cold Spaghetti Salad

I am not sure where this came from. It looks like someone gave it to me many moons ago. I also do not think I ever made it, but who knows it may be worth a try.

Cold Spaghetti Salad

1 lb vermicelli

1 large tomato, cut into small pieces

1 green pepper cut up

1 Bermuda onion, chopped

1 small bottle, Italian dressing

1 red pepper, chopped

Salad seasoning (not sure what this)

Cool pasta after cooking. Add dressing and salad seasoning. Mix well. Add rest of ingredients and refrigerate overnight so flavors meld together.

Sounds interesting. Now I know why I have not made it. I am not a big fan of bottled Italian dressing or raw onions, and I have no clue what salad seasoning is. I guess you can put together your own salad seasoning.  Actually I am not a big fan of any kind of pasta salad.

Italian Herb Muffins

These go nicely with any Italian dish, but are especially nice with pasta. They are pretty simple to make and have a nice aroma!

Italian Herb Muffins

2 C Flour

2 Tbls grate parmesan or romano cheese

1 Tbls sugar

1 Tbls Italian seasoning

3 tsp baking powder

1 tsp salt

1 egg

3/4 C milk

1/2 C vegetable oil

1/4 C butter, softened

1/2 tsp garlic powder

In bowl, combine flour, cheese, sugar, Italian seasoning, baking powder, and salt. In separate bowl, whisk egg, milk, and oil; stir wet mixture into dry ingredients until just moistened. Fill greased or paper-lined muffin cups three-fourths full. Bake at 400 degrees for 15-20 minutes or until a toothpick comes out clean. Cool for five minutes before removing from pan to a wire rack. In a small bowl combine butter and garlic powder. Serve with warm muffins. Batter should make 10 muffins!  Makes nice little mini-muffins also!

Angenetta Cookies

 This is an old Italian recipe my cousin dug up from our grandmother. It is very simple and has very few ingredients. As you can see you can play with the flavoring a bit depending on the extract you use. However the main flavor will be orange.

Angenetta Cookies

2 sticks margarine/butter melted

1 ½ cup sugar

4 eggs

1 c orange juice

2 tsp orange, anise, or lemon extract

6 c flour

6 tsp baking powder

1 tsp baking soda

Beat melted margarine with eggs and sugar. Add extract and orange juice. Mix well. Then add dry ingredients. Drop from teaspoon on lightly greased cookie sheet.

Bake in 350 oven for 15-20 minutes. When cool ice cookies.

Icing: Powdered sugar and milk. Add sugar and milk together until icing like consistency spread over cookies.

Italian Bar Cookies

These are my Dad’s favorite cookies, so my Mom makes them often. They are nice and crunchy and go perfectly with a cup of coffee. He prefers an expresso. These keep a long time in an airtight container and freeze well.

Italian Bar Cookies

1 Cup Brown Sugar

1 Cup Sugar

1 Cup vegetable Oil

4 Eggs

1 tsp Vanilla

Rind from 1 Orange

1 tsp baking soda

Approximately 6 Cups  of Flour (Could be less you will know by the feel of the dough)

1 Cup chopped nuts (walnuts, pecans, almonds)

Mix above ingredients saving flour for last. Add flour until it looks like you will be able to roll out and not too sticky. Take dough and roll out into long log (as big as a half dollar in diameter  - not too big!) Bake like this at 375 degrees for 10-15 min. They should not be brown just cooked. Remove from oven, and cut diagonally about an 2 inches long. Put back in oven and bake until brown another 5-10 min. Let cool and enjoy your treats.
