Spicy Creamed Spinach

An online co-worker gave me this recipe, and it was really good. I did not steam the spinach first as directed, I just chopped up my fresh spinach and sauteed in butter. I also did not add any cheese, it was great without it.

2 bag of fresh spinach or 2 packs of frozen spinach
steam spinach for about 5 minutes then remove from the water and chop into small pieces (if not already chopped)

In sauce pan add butter, one garlic glove and spinach and saute.
Add red pepper flakes,  salt and pepper (taste to make sure flavor is good for you)
Add about 1/4 cup of cream and mix well
Add about 1tsp of your favorite mustard
Sprinkle on cheese of your liking an mix well

This is very good to eat as a side dish, by itself or stuffed into pastry puffs

Simple Green Bean Salad

This is a simple recipe my mother puts together for cookouts. I had forgotten about it, until she brought it to be Fourth of July party.Green Bean Salad2 Cans of thick cut green beans1 small can of sliced black olives1/3 cup red onion chopped (or as much as you like)1/2 Cup of bottled Italian dressing1/2 Cup crumbled Feta Cheese (do not have to use)Mix ingredients together and refrigerate an hour before serving. It is quick and easy and tastes great. You can make larger batches for bigger parties!

Fiddlehead Season!

My husband is from Maine, and a good majority of his family lives in Canada. They grew up gathering fiddleheads during their short season in the spring. Fiddleheads are part of the fern family and the season is quick, about three weeks. The tops are curled, they are called a scrolled.  Each plant produces seven scrolls, and you should not over pick or the plant will die.

You have to boil them (sometimes twice) to remove the bitter flavor, and eat them with butter and white vinegar. We have also chilled them and made a salad with with cut up vegetables and cheeses.

The can be bought at local groceries stores, but I have seen them up to $6 a pound.

I found this picture on Wikipedia, as my husband ate his first harvest of the season last night before I could snap a picture.
